Drainage within the hygiene plan

Food-production drains receive water and residues from the surrounding process area. Channel shape, gullies, removable components and connected pipework all affect how the system can be cleaned. ACO’s product information shows how hygienic drainage design can improve access and cleanability.

The installed system and the manufacturer’s instructions should be identified before maintenance is specified. A clean grating does not show that the sump, trapped areas or connected pipework have also been cleaned.

Flow and hygiene are different checks

A restriction may need deposits or debris to be removed, while the site’s food-safety controls may separately require cleaning, disinfection and verification. Restoring flow through a channel does not demonstrate that microbiological or allergen-control requirements have been met.

A food business must operate a food-safety management system that includes cleaning and hygiene controls. Drainage work in a production area therefore needs to fit the site’s documented cleaning and allergen controls, plus any release checks the site uses before production restarts.

Contamination control during cleaning

Cleaning should prevent dirty water and debris from spreading onto food-contact surfaces or into adjacent production. Isolation, cleaning sequence and the tools used should follow the site’s hygiene arrangements.

Cleaning chemicals and equipment also need to be compatible with the installed drainage material and the manufacturer’s instructions. Removed residues and washwater must follow the site’s waste and discharge controls.

Records, defects and release

Records should distinguish blockage clearance from hygiene verification and note damaged seals, joints or components, as well as areas that could not be reached. A drain-cleaning record should not be taken as evidence that structural repairs are complete or that a production area has passed its food-safety release checks.
